Spicy Cucumber Jalapeño Margarita Recipe

Anyone that has ever eaten with me knows that I have a very low tolerance for anything spicy. I never quite understood why people want their mouth to be on fire while trying to enjoy a meal, and I avoid spicy food at all costs. But for some reason, this cocktail is different. It's definitely got a big kick, but it's absolutely delicious and I am totally obsessed.

We concocted this margarita recipe when one night after work josh said "let's make margaritas," totally out of the blue. Josh is a beer guy and almost never drinks hard alcohol, so I jumped at the chance to play barista for the night. And after getting out all the necessary margarita making supplies, we decided on a cucumber/jalapeño version based on the ingredients we had in the fridge from our veggie box, and also loosely based off of a yummy cucumber margarita we love from Lolita, one of our favorite restaurants. And since that night, it has definitely become my "go to" summer drink - I couldn't wait to get home after work last Friday and just relax on our patio with one again!
Here's how to make your own...

Ingredients (1 drink)
- 4 ounces tequila (must be a silver version)
- 2 ounces of triple sec or agave syrup
- 2 ounces of lime juice
- 1 cucumber, sliced into rounds
- 1 jalapeño, sliced into rounds
- sea salt and black pepper

To start, slice 4 rounds from the cucumber (cutting those rounds into quarters - so 16 pieces) and then cut 2 rounds from the jalapeño.
Next, place the cucumber & jalapeño slices into a cocktail shaker, along with the tequila, and muddle until the cucumbers start to break up. If you don't have a muddler, get creative - we used the end of an ice cream scoop!
Next, add the lime juice, triple sec, and a few ice cubes to your cocktail shaker and shake vigorously.
After that, take one of your limes and use it to wet the rim of your glass before rimming the glass with the salt and black pepper mixture.
Add ice to your glass and then strain and pour your drink! I always add a few extra cucumber slices (or an extra jalapeño round if you are daring) as garnish before serving.
Finally, enjoy!
With a few simple ingredients, this drink is easy to whip up at home and so incredibly delicious and refreshing. One Friday night I had about 4 of them and then things ended up like this, so drink responsibility! ;) And for those of you worried about the spicy factor, take it from a fellow jalapeño hater - it's more than bearable.
